Opinion: Chicago pizza lives up to expectations

SAMSUNGFor as long as I can remember I have been told, “You haven’t had pizza, until you’ve had a real Chicago deep dish pizza.” My father grew up in the outskirts of Chicago and had always described their pizza as if it was the best food ever created. He was convinced that no one could ever make a pizza as good as the chefs in that city. I generally brushed it off and figured that he just related the pizza with a fond childhood memory.

Traveling to Chicago recently, of course, included a stop for pizza. This pizza is very different than your usual friday night pizza. The crust is flakey and cooked to a perfect crisp. It has a taste similar to pie crust, and is a little over an inch deep and about half an inch thick. The first layer is all mozzarella cheese that causes difficulty keeping your mouth clean after a bite. A thin layer of dough covers the cheese allowing for an overflowing amount of tomato sauce to be held on top. The red sauce had a bit of a spice that I wasn’t sure I approved of, but the crust made up for it all. I must say, my father was correct. You can’t find a better pizza.
